  • 20 g (¼ cup) desiccated coconut
  • 80 g (1 cup) white marshmallows, quartered
  • 45 g (⅓ cup) unsalted pistachios, shelled
  • 100 g (½ cup) glacé or candied red cherries, halved

For the Topping

  • 100 g (3.5 oz) white chocolate
  • 2 tbsp red M&M’s or festive candies
  • 1 tsp silver cachous (or sprinkles)

  • 18 × 13 cm (7 × 5 inch) slice tin
  • Baking paper
  • Mixing bowls
  • Metal spoon or spatula
  • Heatproof bowl or double boiler
  • Sharp knife

How To Make It

  1. Line the tin: Start by lining your tin with baking paper this will make it easy to lift out later.
  2. Mix the fun stuff: In a large bowl, combine the coconut, marshmallows, pistachios, and cherries.
  3. Melt the chocolate: Gently melt milk and dark chocolate together over a double boiler or in a heatproof bowl over simmering water. Stir until silky and smooth, then remove from heat and let cool for 2–3 minutes.
  4. Combine & press: Pour the melted chocolate over the mix-ins and stir until everything is coated. Press evenly into the prepared tin with a spatula.
  5. Chill: Pop it into the fridge for about 30 minutes.
